Popayán is sheltered by the Andes mountain range, creating consistent climatic and altitudinal conditions. These factors contribute to the development of coffee beans with sweet and citrus profiles. Our supply partners have worked closely with approximately 75 growers who have contributed to this program and with whom they have established long-term relationships.\u003c\/p\u003e\n\u003cp\u003eThrough this program, farmers are incentivized to prioritize quality, and based on assessments, offer premiums of up to 20% above market prices Following the careful selection of coffee cherries, these are then de-pulped and thoroughly washed to completely remove the mucilage. Afterwards, the coffee is spread out on raised beds for 5-7 days until reaching the ideal moisture content. This method ensures the preservation of the coffee's unique flavours and characteristics.\u003c\/p\u003e\n\u003cp\u003ePopayán Decaf is decaffeinated by the natural Sugar Cane process at the  Descafecol plant at country of origin, in Manizales, Colombia, ensuring the coffee doesn’t travel further than necessary to reduce the carbon footprint impact and support a vertical supply chain without the extra costs and food miles of shipping the coffee to decaffeination plants in Mexico, Canada or Germany, and the profits stay within the country of origin. This involves the coffee been immersed in water with a natural occurring ester from sugar cane which extracts the caffeine from the green coffee. This process avoids excessive temperatures seen in other decaffeination processes and leaves a coffee with its inherent attributes intact and roasts and tastes much more like the original caffeinated Pickers from the nearby Villa Rosario community make multiple passes through the farm throughout harvest, trained to select only the very ripest fruit – almost purple, according to the family. After picking, cherries are sorted by density using water, then disinfected in a high-capacity machine the team affectionately call 'La Maravilla' (Spanish for 'the wonder'). From there, they're laid out on patios to dry for 48 to 72 hours, depending on the weather. This initial stage kicks off fermentation and gives the cherries a head start before the next phase.\u003c\/p\u003e\n\u003cp\u003eThen comes the bit that gives the process its name. The cherries are transferred into what the team at Buena Vista call \"stationary box\" dryers - large steel containers originally designed for drying cocoa pods. Warm air flows gently up from beneath the coffee bed, keeping temperatures below 40°C, while the cherries are stirred manually at regular intervals to ensure even drying. Over 40 to 50 hours, the fruit slowly dries down to a stable 11.5% humidity. Each day of his Bolivian trip, they spent the morning blind cupping coffees, to then find out whose they were after. He loved this lot on the table and then happily discovered he’d already met Victor the day before! He’s a first-generation coffee farmer and this year is his very first harvest, so he’s off to a flying start. His neatly laid-out farm in the steep mountains of the Taypiplaya Colonia grows just 1 hectare of Red Catuai. The plants were raised for 1 year in his nursery (during which Victor won a competition for the best nursery among the Sol de la Mañana producers!) then out in the fields for just 1.5 years so far.\u003c\/p\u003e\n\u003cp\u003eVictor is one of 18 Sol de la Mañana members farming in Taypiplaya. The program began nearly a decade ago when a group of independent producers asked the Rodriguez family for help improving their coffee production. What started as a small initiative has grown into a comprehensive support system for over 100 Bolivian coffee producers. This long-term development program functions like a school for coffee producers, offering hands-on training in agronomy, harvesting, and post-harvest practices. Through this 7 year program, smallholders are empowered to refine their approach to farming, adopting more structured and sustainable practices that result in healthier plants and higher-quality coffee. By investing in education and infrastructure, the program helps producers like Victor build thriving farms and produce coffees that meet the highest standards of the specialty market.\u003c\/p\u003e\n\u003cp\u003eThe Taypiplaya region near Caranavi is a lush, high-altitude area in Bolivia that’s long been a source of excellent coffees. The vibrant coffee-growing community is known for its high-altitude farms and rich biodiversity. It’s one of the country’s most important regions for specialty coffee, with smallholder producers commonly cultivating varietals like Caturra, Catuai, and Typica which grow very happily in the area. We’ve sourced coffee from the region in previous years but these had to be blended lots, often made up of contributions from multiple smallholders, which meant we couldn’t always trace the coffee back to individual farms. Thanks to improved traceability and deeper collaboration with the Sol de la Mañana program, we’re now able to showcase single-producer lots like this one from Victor. Roland was particularly excited about this new development for our 2025 Bolivian coffees and said, \"It’s a significant step forward - not just for transparency, but for recognising the skill and dedication of individual farmers whose work could otherwise go unnamed\".\u003c\/p\u003e\n\u003cp\u003eVictor, like many producers in Taypiplaya, grows coffee but doesn’t have the infrastructure to process it. Agricafe’s washed processing is a meticulous, multi-stage operation designed to highlight clarity and terroir. The largest contributor was Brenda Palli, a 29 year old producer who's been working in Sol De La Mañana since 2021. Her farm, La Hermosa, is located at 1,580 metres above sea level in the colony of Villa Rosario.\u003c\/p\u003e\n\u003cp\u003eTo ensure only the very ripest coffee cherries are picked, it's not uncommon for producers in the SDLM program to do 7 or 8 harvesting passes across their plants, many more than producers in other parts of the world do. This is very labour-intensive and yields smaller amounts each pass, but ensures great quality. The downside is that for each delivery of cherries from the SLDM producers in Bolinda, the lots are often too tiny to process separately and so instead, deliveries from all the producers are combined and processed together.\u003c\/p\u003e\n\u003cp\u003eSo how was this coffee processed, you ask? This is an experimental Anoxic Washed lot. Both Anaerobic and Anoxic are ways of saying \"without oxygen\". Depending on the context, the words can mean different things - sometimes when you see these terms they’re indicative of totally different processes, sometimes they simply refer to a different tweak of the method within the same system.\u003c\/p\u003e\n\u003cp\u003eIn this case, “Anaerobic” refers to the more traditional method of producing coffees, where oxygen is limited during fermentation. That entails creating a sealed environment (in a plastic bag or fermenting vessel) with coffee cherries in water and allowing the yeast and other microorganisms present to consume all available oxygen (which they will do first) before switching to Anaerobic Fermentation.\u003c\/p\u003e\n\u003cp\u003e“Anoxic” is a new variation on this goal from the Los Rodriguez team and Adrian, who is in charge of the Buena Vista wet mill. It involves the same initial steps of placing the cherries into a fermenter, but then a low-pressure CO2 flush is applied to remove oxygen from the system. This creates an environment without free oxygen from the very beginning. Because there is no free Oxygen in the system to allow yeast or bacterial growth to begin naturally, a viable yeast population must be added to facilitate fermentation. In this case, the population is grown from a sample isolated from a coffee cherry from one of the Rodriguez farms.\u003c\/p\u003e\n\u003cp\u003eCompared to Carbonic Maceration, the difference is that the CO2 is not under high pressure - it is simply being used to displace the free O2. This process is the end result of the La Linda \"Experimental\" Washed coffee that we bought last year - this year we see it produces very fruit forward coffees, which are nonetheless very clean. The surrounding mountain ranges act as a natural buffer – keeping temperatures steady between 14 and 29°C year-round, humidity around 75%, and creating a gradual growing season that allows sugars to build slowly and thoroughly. The result is a coffee that's bright and clean, with that signature Cauca sweetness baked in.\u003c\/p\u003e\n\u003cp\u003eThis coffee comes to us through Cofinet, a Colombian importer who've been running the Popayán Reserve project since 2015. They work closely with around 75 smallholder farmers in the region, most growing on plots of less than five hectares. Cherries are milled at Cofinet's Meseta de Popayán facility, where processing and quality control are handled centrally. In return, farmers can earn premiums of up to 20% above market price – tied directly to cup quality, so the incentive to bring in the best cherries runs deep. Cofinet also sends agronomists to work with individual producers directly, and invites farmers to cup their own coffees. The latter might sound like an obvious step, but producers delivering to mills often never taste their own work. These cuppings change that.\u003c\/p\u003e\n\u003cp\u003eThe varieties here – Colombia, Castillo, Caturra, Catimor, and Typica – tell a distinctly Colombian story. Castillo and the Colombia variety are sometimes met with a raised eyebrow in specialty circles; both are rust-resistant hybrids developed by Cenicafé, Colombia's national coffee research centre, and have historically been associated with commodity rather than specialty production. Grown at this altitude, and with this level of care behind them, that reputation doesn't hold. Caturra and Typica contribute brightness and clarity; Castillo and the Colombia variety add body and structure. Together, they make a cup that's more interesting than any one of them would be alone. A washed process keeps things clean and transparent, letting the terroir speak clearly.\u003c\/p\u003e\n\u003cp\u003eOne small thing worth knowing: Cauca experiences drier conditions in the middle of the year and more rainfall at the start and end. Since coffee is harvested throughout the year across the region, there can be minor variations in moisture content in the green coffee between lots.
