Reminiscent of a black tea with a slice of lemon. The roundedness and lower acidity give the lemon a boiled sweet tone, this then finishes with florals on the end.
Despite being the youngest of the Rodriguez farms, coffees from the Waliki farm pack a punch. The Rodriguez family are producers we’re proud to have worked with for a few years now, and we remain committed to supporting their coffee and supporting specialty coffee in Bolivia. This lot in particular showcases their refined approach to processing coffee, it’s a washed processed lot that’s undertaken an anaerobic fermentation. This process has really elevated the cup into an elegant coffee that has all the elements of a delicate washed coffee, with all the complexity and body from the processing.

Finca Waliki has a 3-level structure. On each level, temperatures, terroir, soil and weather conditions vary from one another, and the irradiation of the sun is different on each level, which has a special impact on the maturation of the coffee cherries of each lot.
