This coffee was grown by Camila Gomez at the farm Villa Sebastian. Camila Gomez is 41 years old and is a single mother with two kids (13 and 15 years old). She took over her mother’s farm after she passed away 13 years ago. Camila’s mother used to grow only Caturra but Camila decided to change some of the Caturra trees to the variety Colombia for better resistance to leaf rust. These days Camila also has 4,000 Castillo trees and 8,000 Colombia trees at her farm.

This coffee is harvested following strict ripeness criteria, then water floated and hand-sorted to remove any defects. Cherries are exposed to 30 hours of underwater fermentation before being de-pulped. The coffee in parchment is gently washed and later dried under temperature-controlled conditions until ideal moisture content is achieved.
