Notes

Sidama is one of the most recognised and celebrated regions for high quality naturally processed coffees in Ethiopia. All the coffee for this Ardi lot comes from one mill in the village of Kilenso Moconissa, one of the smallest villages in the Borena district in Sidama.

In order to control the drying process of this coffee it is first dried for two weeks on raised beds in the sun. The coffee is sorted by hand as it dries. Any under-ripe cherry (green in colour) stands in stark contrast to all the red cherries on the bed, and are removed from the lot.

This meticulous effort in sorting during the drying period ensures a clean, intensely sweet, dry processed coffee.
