A complex coffee with vivid fruit notes of passionfruit, red grape and orange, underpinned by syrupy brown sugar and dark chocolate in the finish.
Hailing from Planadas in Tolima this coffee is produced by 175 co-operative members in the El Indio program, under the care of ASOPEP, an association of growers dedicated to quality and sustainability. The association aims to equip producers with environmentally friendly techniques and cupping knowledge so that they are able to assess their own coffees.
With this assistance, most of the growers they work with now process at least a portion of their coffee as naturals. The Tolima region is one the most productive coffee-growing regions and they have always been represented in the Cup of Excellence along with every single coffee competition run by the Colombian Coffee Federation. The coffees are put on raised beds or concrete patios where the quality team monitors this process in order to get even, dry and correct moisture of the bean - 11% moisture content is achieved.
