Gaitania

Ripe stone fruits and a twist of citrus morph into caramel and chocolate tones, with delicate vanilla and floral notes.

Gaitania is a village located within the Planadas municipality in the department of Tolima. It is situated in rich volcanic soil and is surrounded by mountains that provide the perfect fresh weather for growing high-quality coffees. Planadas has a captivating history that enriches the character of its people and the region. It once served as a shelter for political prisoners from the Liberal Party. Over time both parties, Liberales and Conservadores, established a good relationship, leading to the famous kindness of people from Planadas being well-known throughout the country.

In Tolima, our partners collaborate closely with coffee associations and farmers who prioritize quality and sustainable agricultural practices. One of our key partners is the coffee community formed by the Nasa Wesx Indigenous group, who work through the main associations in Gaitania. The community is dedicated to both quality and environmental conservation, achieving organic certification for some of their coffees.

This coffee lot undergoes a meticulous washed process, starting with careful hand sorting to remove any faulty or underripe cherries. The coffee is then de-pulped and thoroughly washed to remove the mucilage. Afterward, the beans are placed on raised beds to achieve the ideal moisture content.
