Coming in first is sweet sugar cane, with a layer of white chocolate hot on its heels. A note of lime and tangerine brings complexity and balance to the cup.

Javier is a coffee farmer who focuses on the production of specialty coffee. In 2012 he started growing coffee at his farm El Higueron, located at 2010 m.a.s.l in Jaén. Javier and his wife Graciela Perez dedicate most of their time to taking care of their farm. Javier produces mainly Catimor and Typica varietals, however he does produce a small amount of Caturra which this lot is.

This coffee is harvested following strict ripeness criteria, later floated and hand-sorted to remove any defects. Cherries were exposed to 30 hours of underwater fermentation before being pulped. The parchment was gently washed and later dried under temperature-controlled conditions until ideal moisture content was achieved.
